Some of you may recall my Baileys Irish Cream Recipe posting back in December. In it, I mentioned that the folks at Baileys Irish Cream would be holding a contest to determine who could come up with the best cocktail recipe using the original Baileys Irish Cream, or its two new flavours, Baileys Mint Chocolate and Baileys Caramel.
The winners have been selected and the lucky mix-masters will be featured in Gourmet Magazine’s upcoming April 2007 issue (along with a trip to New York City with a guest for a private cooking class in the Gourmet Cooking Arts Center with Chef de Cuisine, Jennifer Day.)
The contest was split into two categories, Professional and Amateur. Here are both of the recipes from each category, just in time for St. Patrick's Day no less!
The Professional recipe winner is Jessica Taylor, from Indianapolis, IN. Here' s her winning combination:
1 1/4 oz Baileys® Mint Chocolate
3/4 oz double espresso vodka
1/2 oz Godiva® white chocolate liqueur
2 oz cream
Sprig of mint
Start with a cocktail shaker 3/4 full of ice. Add first 3 ingredients. Shake vigorously. Add cream (half-and-half). Gently stir. Drizzle dark chocolate into martini glass. Pour drink into martini glass. Garnish with three espresso beans in the center of martini. Place the stem of mint sprig in between espresso beans. Sprinkle white chocolate shavings around the rest of the martini.
Jessica says her inspiration came from the idea of adding mint to mousse. She believes it works because it has overall appeal - it not only tastes good but it looks and sounds good as well. She's right!
Amateurs Mr. Frisk and Ms. Taylor used their creativity and love for mixing it up to turn a favorite dessert into something fabulous and drinkable.
The Amateur winning recipe (pictured above):
2.5 oz Baileys® Mint Chocolate
0.5 oz Smirnoff® Black Cherry Vodka
2 tsp cheesecake pudding & pie mix
Dark chocolate shavings
Fill a cocktail shaker with ice
Add Baileys®, Smirnoff®, instant pudding mix, and shake vigorously. Strain into a martini glass. Float whipped cream on top of drink and sprinkle with shaved chocolate. Garnish with mint sprig and a black cherry.
Dennis Fisk says his inspiration came from the popularity and appeal of cheesecakes and the varieties that appear on restaurant menus. He believed using the precise amount of each simple ingredient balances out his drinkable dessert.
