How to Make Vegan Waffles

With Caramelized Figs too!

Here’s a waffle recipe for when you went to dress things up a bit. These Gingerbread Waffles with Caramelized figs are so outrageously good, you’d swear there was butter and milk in them- but they are in fact the culinary wizardry behind Isa Chandra Moskowitz- author of Vegan Brunch- Homestyle Recipes Worth Waking Up for- from Asparagus Omelets to Pumpkin Pancakes.” (published by Da Cappo Lifelong, a member of the Perseus Book Group, 2009).

Around the holidays- should you find yourself with a house full of guests and no idea what to make, here’s the solution. Just don’t forget to make more than you think- these literally will fly off the plate!

Makes 4 six-inch round waffles or 8 four-inch square ones

Isa writes, " The warming scents of ginger, cinnamon, and cloves will have you standing before your waffle iron absolutely drooling in anticipation. These are the perfect waffles for Christmas morning, even if you’re Jewish. That’s how good they are. Serve with caramelized figs for even more wintery perfection."

Ingredients:

  • 2 cups almond milk (or your
  • favorite nondairy milk)
  • 1 teaspoon apple cider vinegar
  • 3 tablespoons canola oil
  • ¼ cup molasses
  • ½ cup brown sugar
  • 1 teaspoon pure vanilla extract
  • 2-inch knob ginger, peeled and
  • grated (about 3 tablespoons)
  • 2¼ cup all-purpose flour
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • 1½ teaspoons cinnamon
  • ¼ teaspoon ground cloves
  • Cooking spray

Method:

  1. Preheat your waffle iron.
  2. In a large mixing bowl use a fork to vigorously mix together milk, vinegar, oil, molasses, brown sugar, and vanilla. Mix until the molasses is mostly dissolved.
  3. Mix in the grated ginger.
  4. Add remaining dry ingredients and mix together until smooth. Spray the waffle iron with cooking spray and cook waffles according to manufacturer’s directions.

Caramelized Figs Recipe- thanks to Isa Chandra Moskowitz

Serves 4 to 6

Isa writes, "Fresh figs are a treat in and of themselves, but place them under the broiler for a few minutes and they are nothing short of ambrosia. I love these on the Gingerbread Waffles. They are best right out of the oven."

Ingredients:

  • Approximately 1 pint fresh figs, any type
  • 2 tablespoons sugar

Method:

  1. Adjust broiler rack to be about 3 inches from the heat. Set the oven to broil. Slice the figs in half lengthwise.
  2. Sprinkle sugar on a plate. Press each fig, cut side down, into the sugar to lightly coat.
  3. Lay figs cut side up in a single layer on a cookie sheet.
  4. Broil until the figs are bubbly and caramelized, 4 to 5 minutes.
  5. Serve immediately.
