Tips and a few quick and simple ideas to make this summer, Martime perfect, no matter where you are.

Summer is almost upon us (cue applause and relief), and with it, comes the opportunity to throw one heck of a good Lobster Party, Maritime style! Bill Hennessey, the owner of Atlantic Ocean Harvest offers up the following tips and recipe to throw the perfect lobster fest in your own backyard, at a cottage (preferably on a lake-side deck), at the beach or where ever you feel summer speaks happy things to you.

First, Bill’s Lobster Party Recipe:

Fun loving friends

Atlantic Ocean Harvest lobster

Large pot

Melted butter with chopped garlic

Patio or dock

Adult beverages- preferably from the Maritime Provinces (Bill is from P.E.I. after all)

Lobster crackers

Other Suggestions:

Corn on the cob (perfect roasted or grilled)

Yukon gold or PEI potatoes

Summer fresh salad of your choice

Lobster preparing and serving tips from Bill and the fine folks at Atlantic Ocean Harvest:

  • Lobster is at its best when served with melted butter, lemon wedges and lots of napkins.
  • The traditional Atlantic way of boiling lobster is at the cottage, with friends and family, on a sandy beach over an open fire, or on the patio over a propane cooker, in a pot of boiling salt water fresh from the Atlantic Ocean. (Note: Given that you may not be geographically blessed with ocean water, a few good handfuls of sea salt in your tap water ought to do the trick. 1 tablespoon of sea salt for every litre of water is the standard measure sure to please the palate.)
  • To cook lobster, first confirm that the lobster is alive by pulling the lobster’s tail back to see if it springs back into the curled position.
  • Live lobster should be placed head first into a pot of boiling water. The pot should be covered.
  • A one pound lobster should be cooked for 10 minutes and an additional 3 minutes for every additional pound.
  • The lobster is cooked when it is bright red and the legs pull away from the body with ease.
  • If you happen to have any leftover lobster, it can easily be frozen. Lobster must be cooked and cooled prior to freezing.
  • Lobster should be placed in a freezer container and covered with a cold brine solution. Freeze lobster at 0 degrees Fahrenheit or -18 degrees Celsius. Frozen lobster will keep for 4 to 6 months.
  • Serve hot lobster with garlic butter, crackers, roasted corn, potatoes, a fresh salad or anything else your heart desires! Happy feasting and happy summer!
