Mega Life Salad Recipe from Fresh

Satisfying, filling and flavourful; the key behind the Fresh Mega Life Salad recipe with marinated tofu and a delectable green dressing.

If you’re looking for a flavour-packed, hearty salad that eats like a main course meal, then Fresh’s Mega Life Salad will certainly stand up to even the most ravenous of appetites. The popular Toronto eatery has been serving up plate after heaping plate of this satisfying salad for the last twelve years, making this dish one of their all time best-sellers.

Here’s the Mega Life Salad recipe, courtesy of Fresh Restaurants.

Serves 1

Ingredients

  • 4 cups mixed lettuce greens
  • 1 carrot, peeled and grated
  • ¼ cup grated beets
  • ½ pack alfalfa spouts
  • 6 cubes marinated tofu (recipe below)
  • 2 tbsp. chopped parsely
  • 3 tbsp. toasted nuts and seeds (i.e. cashews, walnuts, flax seeds)
  • 1 cup spinach, steamed
  • ½ cup sunflower sprouts

Method

  1. Toss lettuce with your choice of dressing and place in large bowl.
  2. Make a ring of grated carrot around the edge of the bowl. On top of the lettuce, in the centre of the ring, put some grated beets. On top of the grated beets, form a doughnut shape out of the alfalfa sprouts. In the centre o the doughnut, put tofu cubes, parsley, nuts and seeds.
  3. Arrange steamed spinach in a pile on top of nuts and seeds. Drizzle with 1 tablespoon dressing.
  4. Garnish with sunflower sprouts and serve.

Marinated Tofu Cubes Recipe from Fresh

The Fresh folks advise: “A good rule of thumb (when choosing a tofu for this salad) is to use a firm or extra-firm tofu. A firm tofu will hold its shape while marinating. Marinated Tofu Cubes require no cooking and can be served in a salad, in a wrap or as a rice bowl topping.”

Makes 6 servings

Ingredients

  • 3 ½ cups tofu
  • ½ cup apple cider vinegar
  • ¾ cup tamari
  • ¼ cup filtered water
  • 1 ½ tbsp. sunflower oil

Method

  1. Cut the tofu into medium-sized cubes.
  2. Combine the remaining ingredients in a bowl; then pour over the tofu cubes. Marinate for 1 hour. Store in a sealed container in fridge. Keeps up to 5 days.

Suggested Dressing: Fresh’s Green Dressing

Makes 4 Servings

Ingredients

  • 2 cloves minced garlic
  • 2 tsp. peeled and chopped ginger root
  • ¼ cup rice vinegar
  • 1 ¼ cup chopped cilantro
  • ¼ cup filtered water
  • 2 tbsp. sunflower oil
  • ¼ tsp. wasabi
  • 2 tbsp. honey

Method

Put the garlic, ginger, rice vinegar, cilantro and water in a blender. Process until smooth. Add remaining ingredients while the blender is running. Remove when fully liquefied. Pour over Mega Life salad and happy dining!
