Eat well and restore your family's health naturally with this groundbreaking cookbook about real foods and traditional recipes.

Nourishing Traditions is a fascinating cookbook exploring the health benefits of many traditional food preparation techniques from around the world. Subtitled The Cookbook That Challenges Politically Correct Nutrition and the Diet Dictocrats, much of the knowledge in Nourishing Traditions has been lost from most contemporary kitchens of the developed world; this can truly be a life changing book. Alongside fascinating notes on the scientific research and folklore surrounding traditional foods, the book contains plentiful, easy to follow recipes. Lists of suppliers enable you to try the ideas out yourself from the word go.

Traditional Health Foods for Healthy Families

Fermented foods, raw dairy produce, unrefined sea salt, organ meats and real bone stock are among the foods advocated in Nourishing Traditions. Sally Fallon, and co-author Mary G Enig Ph.D, who are themselves both mothers of healthy families, give detailed references to the scientific research which back up their claims. This review offers only a selection of the wide range of topics covered in the book.

The Dangers of Modern Food Processing

The hypothesis of Nourishing Traditions is seductive, and convincing; for many years the food industry has sought to smoother research about the benefits of foodstuffs including animal fats and raw dairy produce as the results could seriously compromise health claims about their own products. For example, the book explores industry claims made by the dairy industry about pasteurization, and presents evidence supporting the health benefits of raw dairy produce from healthy herds.

Nourishing Traditions on Real Sea Salt vs. Refined White Salt

Salt also comes under the spotlight in Sally Fallon's Nourishing Traditions; while highly refined salt, including white refined “sea salt” has been demonstrated to cause real health problems, the evidence is far less conclusive for unrefined natural sea salt, such as French Sel de Guerande which contains a wide range of minerals essential for health.

Bone Stock Praised by Nourishing Traditions

The majority of traditional cuisines, notably world renowned French recipes, rely heavily on real bone stock, such as the commonly used chicken bone stock. Easy and inexpensive to make with the recipes in Nourishing Traditions, bone stock offers real health benefits, and also makes the simplest of dishes taste truly delicious. Nourishing Traditions offers an excellent introduction to how to make and use bone stock, as well as exploring the numerous potential health benefits in alleviating disorders as wide-ranging as diabetes, cancer and rheumatoid arthritis.

Sally Fallon Explains Natural Health with Fermented Foods

There is increasing interest in fermented foods, and Nourishing Traditions offers many traditional recipes that involve fermentation:

  • Sourdough starter may be used to produce a wide variety of breads with the reassuringly simple instructions given.
  • Vegetable ferments such as the fermented cabbage dish sauerkraut are not only delicious, but may offer real benefits to sufferers of digestive disorders.
  • Fermented dairy products such as kefir and crème fraiche are easier to digest than modern processed dairy products thanks to their high level of natural enzymes and altered protein content.
