Broiled Goat Cheese Rounds With Tomato Sauce
Rose says: “When I was up in the Canadian Muskokas I had a version of this recipe served to me as an appetizer. It looked simple to recreate, so here’s my version. I like to purchase the goat cheese in the cylinder shape and just slice it into rounds. If you purchase it in a round or other shape just mold it with your hands. You can also make individual portions if you have small decorative baking dishes.”
Baby Shrimp and Pesto Cocktail
Rose says: “You won’t find an easier appetizer to make that’s as delicious as this one. You can also use larger shrimp, but you must dice them. I often stuff this shrimp mixture into mini pitas as an alternative appetizer.”
Rose says: “The combination of morsels of artichoke hearts, crabmeat, Swiss cheese and dill is outstanding when served hot as an appetizer with tasty crackers or flatbread. You can substitute the dill with fresh parsley.”
Ricotta and Smoked Salmon Tortilla Bites
Rose says: ”Whenever I entertain—either at home or in business—I always serve these delicious appetizers. The combination of a cheese spread with fresh dill and smoked salmon is always a hit. Traditionally these are made using whole-fat cream cheese, which has 35% milk fat. I bring the calories and fat right down by using 5% ricotta cheese instead.”
Rose says: “My cooking-school students all rated this as the number-one appetizer spread. I usually serve it with baked tortilla chips or celery sticks, or in a sandwich. You can now find pre-packaged smoked fish in your local supermarket.”
