THE go-to cookie when you feel "emotional" as Erin Bolger would say, and you don't know why. Ideal for private snacking or sharing when you're in the mood.

When asked what cookie or sweet treat is Erin Bolger’s favourite, without hesitation she replied, “Erin’s Go-To Cookie.” The recipe’s preface goes like this, “Sometimes, you don’t know why you’re emotional. You just are. But what you do know is you must bake something now! This is my go to recipe. It’s got a little bit of everything.” One can relate…

This recipe is included in Erin’s new book, The Happy Baker- A Dater’s Guide to Emotional Baking (Happy Baker Publishing, 2009). In it, you’ll find luscious, chocolate loaded, endorphin boosting recipes for when you need a bite of something sweet and decadent. The recipes reflect Erin’s rural Ontario upbringing (in a town of 900 people no less) and the women in her family’s dessert prowess. Recipes have been handed down from grandmothers, aunts, great aunts, moms and “the occasional kissing cousin” as Erin would say.

A Good Idea Comes to Life

Baking and telling stories are Erin’s strong suits. Over the years, she kept hearing people tell her, “You should write a book!” And finally, here it is- a book chock full of dating stories most of us can relate too (well, except the one where she’s making out with a long-haired rocker in a cornfield- that’s pretty particular- but swap the cornfield and perhaps rocker for a subdivision field or a football field and you’ve pretty much got it covered).

This cookie recipe is falls under the “Newly Single” chapter where Erin finds herself newly solo for the first time in seven years. Ya, ouch! But our gal is a trooper and a talented baker. Other sweet-tooth must-try recipes include the Short on Love, Not on Shortbread cookie recipe (this Christmas, the oven will be humming with this one!), and The Big Hurt, Cheesecake (and she means BIG cheesecake with luscious, dripping caramel sauce). You’ll never look at desserts the same way again ladies- guaranteed!

Erin’s Go-To Cookie Recipe (Courtesy of Erin Bolger)

Ingredients:

  • ½ cup sugar
  • ½ cup butter, softened
  • ½ cup smooth peanut butter
  • 1 tsp vanilla
  • 1 egg
  • ¾ cup all purpose flour
  • ¾ cup quick cooking oats
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup semi-sweet chocolate chips
  • ½ cup coconut

Method:

  1. Pre-heat oven to 375 degrees F (that’s 175 degrees Celsius)
  2. In a large bowl, combine sugar and butter and beat until light and fluffy.
  3. Add peanut butter, vanilla, and egg; mix well.
  4. Stir in flour, oatmeal, baking soda, and salt. Stir in chocolate chips and coconut.
  5. Drop by tablespoonfuls on a lined cookie sheet, two inches apart. Flatten with fingers.
  6. Bake for 10-12 minutes until golden brown.
  7. Let cool on wire racks.

Enjoy with a glass of milk, scotch, your favourite libation, a good book or your favourite movie. Just enjoy- that’s the main thing!
