Hey Jacqueline- GREAT question. I did some digging around and found that, according to the Canadian Celiac Association, 1 in 133 Canadians have this condition. That's a larger number than I thought!
Here's how they define the disease: "Celiac disease is a medical condition in which the absorptive surface of the small intestine is damaged by a substance called gluten. This results in an inability of the body to absorb nutrients: protein, fat, carbohydrates, vitamins and minerals, which are necessary for good health."
The Canada Food Guide recommends: Rice flour, arrowroot Starch, Potato Starch, and cornmeal as some of the viable wheat replacements for Celiacs. As your friend correctly asserted, there are numerous gluten-free manufacturers our there- some based in Ontario, others around the country.
